Ingredients
  

1 cup all-purpose flour

1/2 cup lemon pudding mix (instant)

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup white chocolate chips

Zest of 1 lemon

Powdered sugar for dusting

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

      Add the egg and vanilla extract, mixing until well combined.

        In a separate bowl, whisk together the flour, lemon pudding mix, baking powder, and salt.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined.

            Fold in the white chocolate chips and the lemon zest for added flavor.

              Drop spoonfuls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie as they will spread while baking.

                Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the tops are slightly set.

                  Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                    Dust with powdered sugar before serving for an extra sweet touch and lemon flavor.
