Ingredients

For the Red Velvet Cheesecake Layer:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1 cup sour cream

2 tbsp all-purpose flour

2 tbsp unsweetened cocoa powder

2 tbsp red food coloring

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

2-3 tbsp heavy cream (as needed for consistency)

For Garnish:

Fresh raspberries or strawberries (optional)

Chocolate shavings or cocoa powder (optional)

Instructions

Prepare the crust: Preheat your oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs and melted butter until well mixed. Press this mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Bake it in the preheated oven for 10 minutes, then remove it to cool slightly.

Make the cheesecake batter: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add granulated sugar, mixing until well combined. Add the vanilla extract and mix in one egg at a time, ensuring each is thoroughly incorporated before adding the next.

Add sour cream, flour, cocoa powder, and food coloring: Gently fold in sour cream, all-purpose flour, cocoa powder, and red food coloring into the cream cheese mixture until fully combined and smooth.

Bake the cheesecake: Pour the red velvet cheesecake batter into the prepared graham cracker crust. Bake in the preheated oven for about 50-60 minutes, or until the edges are set, but the center still has a slight jiggly consistency. Turn the oven off and crack the door open to let it cool gradually for about 1 hour.

Chill the cheesecake: After the cheesecake cools, cover it with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Prepare the cream cheese frosting: In a mixing bowl, beat the softened cream cheese and butter together until creamy and smooth. Gradually add in powdered sugar, mixing until combined. Stir in the vanilla extract and add heavy cream a tablespoon at a time until the desired consistency is reached.

Frost the cheesecake: Once the cheesecake is fully chilled, carefully remove it from the springform pan. Spread the cream cheese frosting over the top of the cheesecake evenly. If desired, garnish with fresh raspberries, strawberries, or chocolate shavings for an extra touch.

Serve and enjoy: Slice your gorgeous red velvet cheesecake and serve chilled. Enjoy the delightful combination of rich cream cheese flavor mingling with the subtle cocoa and the beautiful red hue!
