Ingredients
  

1 ½ cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking soda

½ teaspoon salt

2 tablespoons unsweetened cocoa powder

1 cup vegetable oil

1 cup buttermilk, at room temperature

2 large eggs

2 tablespoons red food coloring

1 teaspoon vanilla extract

1 package (8 oz) cream cheese, softened

½ cup powdered sugar

½ teaspoon vanilla extract (for cheesecake filling)

1 cup white chocolate chips

Extra powdered sugar, for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners.

    Combine Dry Ingredients: In a medium bowl, whisk together the flour, granulated sugar, baking soda, salt, and cocoa powder until well combined.

      Mix Wet Ingredients: In a separate large bowl, mix together the vegetable oil, buttermilk, eggs, red food coloring, and vanilla extract until smooth.

        Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

          Bake Mini Cakes: Fill each muffin liner about 2/3 full with the red velvet batter. Bake in the preheated oven for about 15-18 minutes, or until a toothpick inserted in the center comes out clean. Allow cooling completely on a wire rack.

            Prepare the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese, powdered sugar, and ½ teaspoon vanilla extract until creamy and smooth.

              Assemble the Bites: Once the mini cakes are cool, slice off the tops to level them. Take a small scoop of the cheesecake filling and place it on the cut side of the red velvet bite. Place the top back on, creating a sandwich.

                Melt White Chocolate: In a microwave-safe bowl, melt the white chocolate chips in 30-second increments, stirring in between until fully melted.

                  Dip or Drizzle: Dip each cheesecake bite into the melted white chocolate or drizzle it over the top for decoration.

                    Chill and Serve: Place the assembled bites in the fridge for at least 30 minutes to set. Once ready, dust with extra powdered sugar and serve.
