Ingredients

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the cheesecake filling:

16 oz cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup creamy peanut butter

1 cup crushed Butterfinger candies (about 3-4 bars)

For the topping:

½ cup heavy whipping cream

½ cup powdered sugar

1 cup crushed Butterfinger candies

Optional: melted chocolate for drizzling

Instructions

Prep the Crust: Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated and resemble wet sand.

Form the Base: Press the crumb mixture evenly into the bottom of a greased 9x13-inch baking pan, creating a firm crust. Bake in the preheated oven for 10 minutes, then remove and let it cool.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue to beat until well combined. Add in the eggs, one at a time, mixing on low speed after each addition. Then, mix in the vanilla extract and peanut butter until fully incorporated.

Add Candy: Gently fold in the crushed Butterfinger candies into the cheesecake batter until evenly distributed.

Bake the Cheesecake: Pour the cheesecake filling over the cooled crust and spread it evenly. Bake for 30-35 minutes, or until the center is set and slightly jiggles when gently shaken. Remove from the oven and let it cool completely to room temperature.

Prepare the Topping: In a mixing bowl, whip the heavy cream and powdered sugar together until soft peaks form. Once the cheesecake is completely cooled, spread the whipped cream topping evenly over the cheesecake layer.

Finish with Butterfinger: Sprinkle the remaining crushed Butterfinger candies generously on top of the whipped cream. For an extra touch, drizzle melted chocolate over the top.

Chill and Cut: Refrigerate the bars for at least 2 hours to set. Once chilled, lift the cheesecake out of the pan using the edges of the foil (if you used it), and cut into bars.

Serve: Enjoy these decadent Reese's Butterfinger Cheesecake Bars chilled, and share with family and friends or keep them all to yourself!
