2 large apples (preferably honeycrisp or gala), diced

1 cup fresh cranberries (or dried cranberries for sweetness)

2 large carrots, grated

1/4 cup walnuts, chopped

1/4 cup raisins or dried cranberries

1/4 cup Greek yogurt (or dairy-free substitute)

1 tablespoon honey (or maple syrup for a vegan option)

1 tablespoon lemon juice

1 teaspoon cinnamon

Salt and pepper to taste

Fresh parsley for garnish (optional)

Prepare Ingredients: Start by washing the apples thoroughly. Dice the apples into small cubes, and set aside in a bowl. If using fresh cranberries, rinse and set aside; if using dried cranberries, measure and set aside.

    Grate Carrots: Peel the carrots and grate them using a box grater or food processor. Add the grated carrots to the bowl with the apples.

      Combine the Dry Ingredients: In a large mixing bowl, combine the diced apples, grated carrots, fresh or dried cranberries, chopped walnuts, and raisins. Toss gently to mix.

        Make the Dressing: In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, and a pinch of salt and pepper. Adjust the sweetness by adding more honey if desired.
