Ingredients

4 cups fresh pineapple, chopped (about 1 medium pineapple)

1/2 cup granulated sugar (adjust based on sweetness of pineapple)

1 tablespoon lime juice

1/4 cup coconut water (optional for added flavor)

Pinch of salt

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Pineapple: Begin by peeling, coring, and chopping the pineapple into small chunks. You need about 4 cups of fresh pineapple pieces.

Blend Ingredients: In a blender or food processor, combine the chopped pineapple, sugar, lime juice, coconut water (if using), and a pinch of salt. Blend until smooth and the sugar is fully dissolved. Taste the mixture and adjust sweetness with additional sugar, if necessary.

Chill the Mixture: Pour the pineapple mixture into an airtight container and place it in the refrigerator. Chill for at least 1-2 hours or until it’s very cold.

Freeze the Sorbet: Once chilled, pour the mixture into an ice cream maker. Churn according to the manufacturer's instructions until it reaches a fluffy and soft-serve consistency.

Harden the Sorbet: Transfer the sorbet to a shallow, airtight container and spread it out evenly. Press a piece of plastic wrap directly on the surface to avoid ice crystals. Freeze for at least 3-4 hours or until firm.

Serve: Remove the sorbet from the freezer about 5-10 minutes before serving to soften slightly. Scoop into bowls or cones and garnish with fresh mint leaves, if desired. Enjoy your refreshing pineapple sorbet on a hot summer day!
