Refreshing Raspberry Mojito

Ingredients
  

1 cup fresh raspberries (plus extra for garnish)

10-12 fresh mint leaves (plus extra for garnish)

2 tablespoons granulated sugar (or to taste)

Juice of 1 lime

1 cup soda water (sparkling water)

1 cup ice cubes

Optional: 2 ounces white rum (for an alcoholic version)

Instructions
 

In a sturdy glass or cocktail shaker, combine the fresh raspberries, mint leaves, and granulated sugar.

    Using a muddler or the back of a spoon, gently muddle the raspberries and mint leaves together until the raspberries are broken down and the mint releases its aromatic oils. Be careful not to over-muddle, as you want the mint to remain fragrant.

      Add the lime juice to the mixture and stir well to combine the flavors.

        If you are making the alcoholic version, add the white rum to the mixture and gently stir.

          Fill a serving glass with ice cubes.

            Pour the muddled mixture over the ice and top it off with soda water.

              Stir gently to combine all the ingredients without losing the fizz of the soda water.

                Garnish with additional raspberries and mint leaves. Serve immediately with a straw or a stirring stick.
