Restaurant-Style Chicken Fried Rice

Ingredients
  

2 cups of cooked jasmine rice (preferably day-old for better texture)

1 cup boneless, skinless chicken breast, diced

2 tablespoons vegetable oil

1 cup mixed vegetables (peas, carrots, corn)

3 green onions, chopped

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

2 eggs, lightly beaten

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.

    Cook Vegetables: In the same skillet, add the remaining tablespoon of oil. Sauté the minced garlic until fragrant, about 30 seconds. Then, add the mixed vegetables and stir-fry for about 2-3 minutes until they are tender.

      Add Rice: Push the vegetables to one side of the skillet. Add the cooked rice to the empty side of the skillet, breaking up any clumps. Stir-fry the rice for about 3-4 minutes until it’s heated through and starts to become slightly crispy.

        Incorporate Chicken and Flavors: Add the cooked chicken back into the skillet along with the soy sauce, oyster sauce (if using), and sesame oil. Mix everything together well, making sure the sauces coat the rice evenly.

          Eggs: Push the rice to the sides of the skillet, creating a well in the center. Pour the beaten eggs into the well and scramble them until just set. Once cooked, stir everything together thoroughly.

            Finish with Green Onions: Add the chopped green onions, mixing well, and cook for an additional minute. Taste and adjust seasoning with more soy sauce, salt, or pepper as desired.

              Serve: Transfer the fried rice to a serving platter. Garnish with fresh cilantro if desired and serve hot.
