Ingredients
  

1 cup shredded corned beef

1 cup sauerkraut, drained and chopped

1 cup Swiss cheese, shredded

1/2 cup cream cheese, softened

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1 cup breadcrumbs (preferably panko)

2 eggs, beaten

Oil for frying

Instructions
 

In a large mixing bowl, combine the shredded corned beef, chopped sauerkraut, Swiss cheese, cream cheese, mayonnaise, Dijon mustard, garlic powder, onion powder, and black pepper. Mix well until all ingredients are evenly incorporated.

    Form the mixture into golf ball-sized balls (about 1 inch in diameter). Place the balls on a baking sheet lined with parchment paper.

      Set up a breading station: Place the breadcrumbs in a shallow dish, and the beaten eggs in another dish.

        Dip each ball into the beaten eggs, ensuring it's fully coated, then roll it in the breadcrumbs until nicely covered. Place back on the baking sheet.

          Heat oil in a deep frying pan or fryer to 350°F (175°C). Carefully add the Reuben balls in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until they are golden brown and crispy.

            Use a slotted spoon to remove the balls from the oil and place them on a plate lined with paper towels to drain excess oil.
