1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

2 large eggs

1 cup granulated sugar

½ cup vegetable oil

1 tsp vanilla extract

1 cup chopped fresh rhubarb (or frozen, thawed)

½ cup chopped walnuts or pecans (optional)

1 tsp cinnamon (for extra flavor)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

      In a large mixing bowl, beat the eggs and then add the sugar, vegetable oil, and vanilla extract. Mix well until combined and slightly frothy.

        Gradually add the dry ingredients to the wet ingredients, stirring just until mixed. Avoid overmixing to maintain moisture.

          Gently fold in the chopped rhubarb and walnuts or pecans (if using), ensuring they are evenly distributed in the batter.

            Pour the batter into the prepared loaf pan and smooth the top with a spatula.

              Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted in the center comes out clean.

                Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
