1 ½ cups diced rhubarb (fresh or frozen)

2 cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

2 large eggs

½ cup vegetable oil

1 teaspoon vanilla extract

½ cup buttermilk (or milk with a squeeze of lemon juice)

½ cup chopped walnuts or pecans (optional)

¼ cup coarse sugar for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Prepare Rhubarb: If using fresh rhubarb, wash, trim, and dice it into small pieces. If using frozen rhubarb, thaw and drain excess liquid.

      Mix Dry Ingredients: In a large mixing bowl, whisk together flour, granulated sugar, baking soda, baking powder, salt, cinnamon, and nutmeg until well combined.

        Combine Wet Ingredients: In a separate bowl, beat the eggs and then add the vegetable oil, vanilla extract, and buttermilk. Mix until smooth.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; some lumps are okay.

            Fold in Rhubarb: Gently fold in the diced rhubarb and nuts (if using) until evenly distributed in the batter.

              Pour into Pan: Scrape the batter into the prepared loaf pan. Smooth the top, and sprinkle coarse sugar on top for a sweet crust.

                Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

                  Cool and Serve: Once baked, remove the quick bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
