Ingredients

2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 cup fresh rhubarb, chopped (about 2 stalks)

1/2 cup heavy cream

1 large egg

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

1/2 cup powdered sugar (for glaze)

1-2 tablespoons milk (for glaze)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.

Cut in the Butter: Add the cold, cubed butter to the dry mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.

Add Rhubarb: Gently fold in the chopped rhubarb, ensuring they are evenly distributed throughout the mixture.

Mix Wet Ingredients: In a separate bowl, whisk together the heavy cream, egg, vanilla extract, and almond extract (if using) until well blended.

Combine Mixtures: Pour the wet ingredients into the dry mixture and stir until just combined. Be careful not to overmix. The dough should be slightly sticky.

Form Scones: Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1 inch thick. Cut the dough into triangles or use a round cutter to create circular scones.

Bake: Place the scones on the prepared baking sheet, ensuring they are spaced a little apart. Bake in the preheated oven for about 15-20 minutes or until they turn golden brown.

Make the Glaze: While the scones are baking, prepare the glaze by mixing powdered sugar with milk until smooth and drippy.

Cool and Glaze: Once baked, remove the scones from the oven and allow them to cool for a few minutes on a wire rack. Drizzle the glaze over the warm scones before serving.

Serve: Enjoy your delightful rhubarb scones fresh out of the oven with a cup of tea or coffee!
