200g dark chocolate (70% cocoa)

3 large eggs, separated

50g granulated sugar

1 teaspoon vanilla extract

1 pinch of sea salt

300ml heavy whipping cream

2 tablespoons unsweetened cocoa powder (for dusting)

Fresh berries and mint leaves (for garnish)

Instructions
 

Begin by melting the dark chocolate. Chop it into small pieces and place it in a heatproof bowl over a pot of simmering water (double boiler method). Stir gently until smooth. Remove from heat and let it cool slightly.

    In a separate bowl, whisk the egg yolks and 25g of the sugar until pale and creamy. Add the vanilla extract and the cooled melted chocolate, mixing until well combined.

      In another bowl, whip the egg whites with a pinch of sea salt until soft peaks form. Gradually add the remaining 25g of sugar and whisk until glossy stiff peaks form.

        In a large mixing bowl, whip the heavy cream until soft peaks form.

          Carefully fold half of the whipped cream into the chocolate mixture until just combined, then fold in the egg whites in two batches. Finally, fold in the remaining whipped cream gently until no streaks remain.

            Divide the mousse evenly into serving dishes or glasses and refrigerate for at least 4 hours or until set.

              Just before serving, dust the tops with cocoa powder and garnish with fresh berries and mint leaves.
