1 lb (450g) boneless, skinless chicken thighs, diced

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

1/4 teaspoon red pepper flakes (optional)

6 cups (1.4 L) chicken broth

1 cup (240ml) heavy cream

1 cup (150g) frozen peas

1 cup (150g) fresh baby spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large pot, heat the olive oil over medium heat. Add the diced chicken thighs and season with salt and pepper. Cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.

    Cook the Vegetables: In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes or until the vegetables are softened.

      Add Spices: Stir in the dried thyme, smoked paprika, and red pepper flakes (if using). Cook for an additional minute until fragrant.

        Combine Broth and Chicken: Pour in the chicken broth and return the browned chicken to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

          Add Cream and Greens: Reduce the heat to low and stir in the heavy cream, frozen peas, and baby spinach. Simmer gently for another 5-10 minutes, allowing the flavors to meld. Adjust seasoning with salt and pepper as needed.
