Ingredients
  

  • 1 cup whole milk ricotta cheese well-drained
  • 1/2 cup freshly grated Parmesan cheese
  • 1 large egg lightly beaten
  • 1/4 cup fresh parsley chopped
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground
  • 3 cloves garlic minced
  • 1 cup marinara sauce for serving
  • 2 tablespoons olive oil for greasing the baking sheet

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper, greasing it lightly with olive oil.
  • In a large mixing bowl, combine the ricotta cheese, grated Parmesan, beaten egg, chopped parsley, dried oregano, salt, black pepper, and minced garlic. Mix until well combined.
  • Add in 1/2 cup of breadcrumbs gradually, mixing until the mixture holds together but is still moist. If too wet, add more breadcrumbs as necessary to achieve the right consistency.
  • Using your hands, form the mixture into meatballs about the size of a golf ball, placing them on the prepared baking sheet as you go.
  • Bake the meatballs in the preheated oven for 20-25 minutes, or until they are golden brown and cooked through. Use a meat thermometer to ensure they reach an internal temperature of 160°F (70°C).
  • While the meatballs are baking, heat the marinara sauce in a saucepan over low heat until warmed through.
  • Once the meatballs are done, serve them hot with the warm marinara sauce poured over the top and garnish with extra Parmesan and parsley if desired.

Notes

Tip 1: For extra flavor, you can add crushed red pepper flakes to the meatball mixture.
Tip 2: These meatballs can be made ahead of time and frozen; just thaw and reheat in the marinara sauce.
Variation: Substitute ground turkey for a lighter version of these meatballs.
