1 cup fresh ricotta cheese

1/2 cup shelled pistachios, finely chopped

2 tablespoons honey, plus more for drizzling

1 teaspoon vanilla extract

Pinch of sea salt

1/4 teaspoon ground cinnamon (optional)

Fresh mint leaves (for garnish)

1 cup digestive biscuits or graham cracker crumbs (for serving)

Instructions
 

In a mixing bowl, combine the ricotta cheese, 2 tablespoons honey, vanilla extract, sea salt, and ground cinnamon (if using).

    Mix thoroughly until all ingredients are well incorporated and the mixture is creamy.

      Carefully fold in the finely chopped pistachios, reserving some for garnish.

        Use your hands to form small bite-sized balls (about 1 inch in diameter) from the ricotta mixture and place them on a parchment-lined tray.

          Once all the bites are formed, refrigerate them for about 30 minutes to set.

            Before serving, drizzle a little honey over each bite and sprinkle with the reserved chopped pistachios.

              Optionally, serve with a side of digestive biscuits or graham cracker crumbs to add a delightful crunch on the side.
