1 cup fresh ricotta cheese

1/4 cup honey (plus extra for drizzling)

1/2 teaspoon vanilla extract

1/4 teaspoon almond extract

1/2 cup finely chopped pistachios

Zest of 1 lemon

1/4 teaspoon sea salt

Fresh mint leaves (for garnish)

Mini phyllo cups or store-bought pastry shells (optional)

Instructions
 

In a medium mixing bowl, combine the ricotta cheese, honey, vanilla extract, almond extract, lemon zest, and sea salt. Mix until smooth and creamy.

    Gently fold in the chopped pistachios, reserving a few for garnish.

      If using mini phyllo cups or pastry shells, preheat your oven according to package directions (usually around 350°F or 175°C). Bake the shells for 5-7 minutes, or until golden brown and crispy. Allow them to cool.

        Spoon or pipe the ricotta mixture into the cups or directly onto a serving platter if not using shells.

          Drizzle additional honey on top for extra sweetness.

            Garnish with more chopped pistachios and fresh mint leaves.

              Serve immediately, or chill in the refrigerator for up to 30 minutes before serving for a refreshing bite.
