2 lbs ripe tomatoes, halved

1 large onion, quartered

4 garlic cloves, peeled

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried basil

1 teaspoon sugar (optional, to balance acidity)

2 cups vegetable broth

1/2 cup heavy cream (optional for creaminess)

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a large bowl, toss the halved tomatoes, quartered onion, and garlic cloves with olive oil, salt, pepper, dried basil, and sugar (if using).

      Spread the vegetable mixture on the prepared baking sheet in a single layer.

        Roast in the preheated oven for 30-35 minutes, or until the tomatoes are tender and caramelized.

          Remove from the oven and let cool slightly.

            Transfer the roasted vegetables to a blender along with the vegetable broth. Blend until smooth, adding more broth as needed to reach your desired consistency.

              Pour the soup into a pot over medium heat. If you'd like a creamier soup, stir in the heavy cream and heat until warmed through, but do not bring to a boil.

                Taste and adjust seasoning as necessary. Serve hot, garnished with fresh basil leaves.
