9 lasagna noodles (regular or no-boil)

2 cups ricotta cheese

2 cups shredded mozzarella cheese (divided)

1 cup grated Parmesan cheese

2 cups fresh spinach, chopped

1 cup roasted red peppers, sliced (jarred or homemade)

2 cups marinara sauce

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Salt and pepper to taste

Prepare the Noodles: If using regular lasagna noodles, cook them according to package instructions until al dente. Drain and set aside to cool slightly. No-boil noodles can be used directly.

    Make the Cheese Mixture: In a medium bowl, combine the ricotta cheese, 1 cup of shredded mozzarella, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Stir in the chopped spinach until well combined.

      Layer the Lasagna:

        - Preheat your oven to 375°F (190°C).

          - Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.

            - Place 3 lasagna noodles over the sauce.

              - Spread half of the ricotta spinach mixture over the noodles.

                - Add half of the roasted red peppers on top of the ricotta mixture.

                  - Pour 1/3 of the remaining marinara sauce over the peppers.

                    - Repeat the layering: 3 noodles, the remaining ricotta spinach mixture, the remaining roasted red peppers, and another 1/3 of the marinara sauce.

                      Top the Lasagna: Place the final layer of 3 lasagna noodles on top, covering with the remaining marinara sauce. Sprinkle the remaining mozzarella cheese on top, and if desired, add red pepper flakes for an extra kick.

                        Bake: Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray). Bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and slightly golden.

                          Rest and Serve: Remove the lasagna from the oven and let it rest for about 10-15 minutes before slicing. Serve warm, enjoying each delicious bite!
