Roasting Veggies Meets Garlic Bliss

Ingredients
  

2 cups broccoli florets

2 cups cauliflower florets

1 cup cherry tomatoes, halved

1 large red bell pepper, chopped

1 large zucchini, sliced

6 cloves garlic, minced

1/4 cup olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    In a large mixing bowl, combine the broccoli, cauliflower, cherry tomatoes, bell pepper, and zucchini.

      In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, smoked paprika, salt, and pepper until well combined.

        Pour the garlic-blend oil over the vegetables in the mixing bowl and toss until all the veggies are evenly coated with the mixture.

          Spread the seasoned vegetables in a single layer on the prepared baking sheet, ensuring they are not overcrowded for optimal roasting.

            Roast the veggies in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized, stirring halfway through for even cooking.

              Once roasted, remove from the oven and sprinkle with fresh parsley for a burst of color and flavor.

                Serve immediately as a side dish or over cooked grains for a delightful main course!
