Ingredients

1 pre-made graham cracker crust (9-inch)

2 cups root beer (preferably chilled)

1 cup heavy whipping cream

1 cup vanilla ice cream

1/2 cup sugar

1/4 cup cornstarch

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1/2 teaspoon root beer extract (optional, for extra flavor)

Whipped cream, for topping

Cherries, for garnish

Instructions

Prepare the Filling:

    - In a medium saucepan, whisk together the sugar, cornstarch, and salt until combined. Gradually add the root beer while whisking to prevent lumps.

      - Place the saucepan over medium heat, stirring constantly, until the mixture begins to thicken and bubble. Remove from heat once it reaches a pudding-like consistency.

        Incorporate Ice Cream:

          - Stir in the vanilla ice cream until completely melted and fully incorporated into the root beer mixture. Add the vanilla extract and root beer extract, if using. Mix until smooth and let it cool for a few minutes.

            Assemble the Pie:

              - Pour the root beer filling into the prepared graham cracker crust, smoothing the top with a spatula. Place the pie in the refrigerator to set for about 2 hours or until the filling is firm.

                Whip the Cream:

                  - While the pie is setting, prepare the whipped cream. In a chilled bowl, beat the heavy whipping cream on medium-high speed until soft peaks form. You can add a little sugar to taste, if desired.

                    Serve:

                      - Once the pie is firm, remove it from the refrigerator. Generously top with whipped cream and garnish with cherries. Slice and serve chilled, enjoying the nostalgic flavors of a root beer float in pie form!
