Ingredients

For the Cheesecake Mixture:

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup heavy cream

1/2 teaspoon rose water

For the Ice Cream Base:

1 cup whole milk

1 cup heavy cream

3/4 cup granulated sugar

1 teaspoon vanilla extract

Pinch of salt

For the Pistachio Swirl:

1/2 cup unsalted pistachios, finely chopped

1/4 cup honey or maple syrup

1 tablespoon butter, melted

1/4 teaspoon cardamom powder (optional)

Instructions

Prepare the Cheesecake Mixture:

    - In a mixing bowl, beat together the softened cream cheese and powdered sugar until smooth.

      - Add the vanilla extract, heavy cream, and rose water. Mix until well incorporated and creamy. Set aside in the refrigerator to chill.

        Make the Ice Cream Base:

          - In a separate bowl, whisk together the whole milk, heavy cream, granulated sugar, vanilla extract, and salt until the sugar is fully dissolved.

            Chill the Mixtures:

              - Chill both the cheesecake mixture and the ice cream base in the refrigerator for at least 1 hour. This will help them freeze more smoothly when combined.

                Combine the Mixtures:

                  - Once chilled, pour the cheesecake mixture into the ice cream base. Gently fold together until blended, being careful not to overmix.

                    Prepare the Pistachio Swirl:

                      - In a small bowl, combine the chopped pistachios, honey (or maple syrup), melted butter, and cardamom powder (if using). Mix well.

                        Churn the Ice Cream:

                          - Pour the combined ice cream mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

                            Add the Pistachio Swirl:

                              - Transfer half of the churned ice cream to a freezer-safe container. Drizzle half of the pistachio mixture over it, then gently swirl with a knife. Add the remaining ice cream and top with the rest of the pistachio mixture, swirling again.

                                Freeze:

                                  - Cover the container with a lid or plastic wrap and freeze for at least 4 hours, or until firm.

                                    Serve:

                                      - Scoop the Rose Pistachio Cheesecake Ice Cream into bowls or cones. Enjoy the delightful combination of creamy cheesecake, fragrant rose, and crunchy pistachios!
