Rosemary & Roasted Garlic Artisan Bread

Ingredients
  

4 cups all-purpose flour

1 cups warm water (110F/43C)

2 teaspoons instant yeast

2 teaspoons salt

3 tablespoons fresh rosemary, finely chopped

1 whole bulb of garlic

2 tablespoons olive oil

Extra flour for dusting

Prepare the Roasted Garlic: Preheat your oven to 400F (200C). Cut the top off the garlic bulb, drizzle with a teaspoon of olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft and caramelized. Allow to cool, then squeeze the garlic cloves out into a small bowl and mash to a paste.

    Mix the Dough: In a large mixing bowl, combine the flour, instant yeast, salt, and chopped rosemary. In a separate bowl, mix the warm water and the roasted garlic paste until well combined. Pour the wet mixture into the dry ingredients and mix with a wooden spoon until all flour is incorporated and a shaggy dough forms.

      Knead the Dough: Dust a clean surface with flour and turn the dough out. Knead for about 10 minutes until smooth and elastic, adding flour as necessary to prevent sticking.

        First Rise: Place the kneaded dough in a lightly oiled bowl, cover it with a damp towel or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

          Shape the Dough: After the first rise, punch down the dough to release the air. Turn it onto a floured surface and shape it into a round loaf by tucking the edges into the center. Place the shaped dough onto a parchment-lined baking sheet.

            Second Rise: Cover the dough again and let it rise for another 30-45 minutes until puffed and nearly doubled.

              Preheat the Oven: While the dough is rising, preheat your oven to 450F (230C). Place a Dutch oven (or a baking stone) inside to heat.

                Score and Bake: Once the dough is ready, use a sharp knife to make a shallow slash across the top for venting. Carefully remove the hot Dutch oven from the oven, take off the lid, and gently place the dough inside. Cover and bake for 30 minutes. After 30 minutes, remove the lid and bake for an additional 15-20 minutes until the bread is golden brown and sounds hollow when tapped on the bottom.

                  Cool and Enjoy: Remove the bread from the oven and transfer it to a wire rack to cool completely before slicing.
