Ingredients

1 pound breakfast sausage (spicy or mild, as per preference)

8 ounces cream cheese, softened

1 cup shredded cheddar cheese

1 can (10 oz) diced tomatoes with green chilies (Rotel), drained

1 cup biscuit mix (like Bisquick)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for extra heat)

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 375F (190C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the softened cream cheese and breakfast sausage. Use your hands or a spatula to mix until fully integrated.

Add the shredded cheddar cheese, drained Rotel tomatoes, biscuit mix, garlic powder, onion powder, black pepper, and cayenne pepper (if using) to the sausage mixture. Mix well until all ingredients are combined.

Using your hands, shape the mixture into 1-inch balls and place them on the prepared baking sheet, leaving a little space between each ball.

Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through. The internal temperature should reach 160F (70C).

Once baked, remove from the oven and let them cool slightly. Garnish with fresh parsley before serving.
