Ingredients
  

3 cups all-purpose flour

1 teaspoons salt

2 teaspoons sugar

1 cup warm water (about 110F/43C)

2 teaspoons active dry yeast

2 tablespoons olive oil

1 tablespoon fresh rosemary, chopped (optional)

1 tablespoon coarse sea salt (for topping)

Instructions
 

Activate the Yeast: In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Prepare the Dough: In a large mixing bowl, combine the all-purpose flour, salt, and rosemary (if using). Make a well in the center and pour in the yeast mixture and olive oil. Stir until just combined.

      Knee the Dough: Transfer the dough onto a floured surface and knead for about 5-7 minutes, or until the dough is smooth and elastic.

        First Rise: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

          Shape the Bread: After the dough has risen, punch it down to remove excess air. Shape it into a round loaf.

            Preheat the Skillet: Place a cast-iron skillet on medium heat. While heating, let the dough rest for about 20 minutes under a cloth.

              Cook the Bread: Carefully place the loaf into the hot skillet. Cover with a lid and cook on medium-low heat for 20-25 minutes on one side. Check to prevent burning.

                Flip and Finish: Gently flip the bread using a spatula, sprinkle the top with coarse sea salt, and cover again. Cook for an additional 15-20 minutes, or until the bread is golden brown and sounds hollow when tapped.

                  Cool and Serve: Once cooked, transfer the bread onto a wire rack to cool for about 10 minutes before slicing. Serve warm with butter or olive oil.
