Ingredients
  

4 salmon fillets (6 ounces each)

2 tablespoons olive oil

Salt and pepper, to taste

1 ripe mango, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño, minced (optional for heat)

Juice of 1 lime

1/4 cup fresh cilantro, chopped

1 avocado, diced (optional)

Lime wedges for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Salmon: Pat the salmon fillets dry with paper towels. Brush both sides with olive oil and season with salt and pepper. Place them on a baking sheet lined with parchment paper.

      Bake the Salmon: Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.

        Make the Mango Salsa: While the salmon is baking, prepare the mango salsa. In a medium bowl, combine the diced mango, red bell pepper, red onion, jalapeño (if using), lime juice, and cilantro. Gently fold in diced avocado, if desired. Adjust seasoning with salt to taste.
