Ingredients

4 salmon fillets (6 ounces each)

2 tablespoons olive oil

Salt and black pepper, to taste

1 tablespoon fresh dill, chopped (you can substitute with parsley if preferred)

1 cup heavy cream

1 lemon (juice and zest)

2 cloves garlic, minced

2 tablespoons capers, rinsed and drained

1 tablespoon butter

Instructions

Prepare the Salmon: Pat the salmon fillets dry with paper towels and season both sides generously with salt and black pepper.

Cook the Salmon: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for about 5-6 minutes without moving them to get a nice sear. Carefully flip and cook for another 3-4 minutes or until cooked through to your preference. Remove the salmon from the skillet and place it on a serving plate, keeping it warm.

Make the Lemon Cream Sauce: In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant but not browned.

Add Cream and Seasonings: Pour in the heavy cream and stir in the lemon juice and zest. Using a wooden spoon, scrape up any browned bits from the bottom of the skillet for added flavor. Bring the mixture to a gentle simmer.

Incorporate Capers and Fresh Herbs: Stir in the capers and chopped dill, letting the sauce simmer for an additional 2-3 minutes until slightly thickened. Taste and adjust the seasoning with more salt or lemon as desired.

Serve: Carefully spoon the lemon cream sauce over the seared salmon fillets. Garnish with additional dill or lemon zest if desired. Serve immediately with your choice of sides (like steamed vegetables or rice).
