Ingredients
  

For the Crust:

1 ½ cups all-purpose flour

1/4 cup unsweetened cocoa powder

1/2 cup powdered sugar

1/4 teaspoon salt

1/2 cup unsalted butter, chilled and cubed

1 large egg yolk

2 tablespoons cold water

For the Filling:

8 ounces dark chocolate (70% cocoa), chopped

1 cup heavy cream

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon flaky sea salt (for garnish)

Instructions
 

Prepare the Crust:

    - In a large bowl, whisk together the flour, cocoa powder, powdered sugar, and salt.

      - Add the chilled butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

        - Stir in the egg yolk and cold water until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.

          Blind Bake the Crust:

            - Preheat the oven to 350°F (175°C).

              - Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan.

                - Place the dough in the tart pan and trim the edges. Prick the bottom with a fork.

                  - Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes.

                    - Remove the weights and parchment, and bake for an additional 10-15 minutes until the crust is set and slightly firm. Allow to cool.

                      Make the Filling:

                        - In a heatproof bowl, combine the chopped dark chocolate.

                          - In a small saucepan, heat the heavy cream and granulated sugar over medium heat until just simmering. Pour over the chocolate and let sit for a minute, then stir until smooth.

                            - Whisk in the eggs and vanilla extract until fully combined.

                              Assemble the Tart:

                                - Pour the chocolate filling into the cooled tart shell, spreading it evenly.

                                  - Bake in the preheated oven for 20-25 minutes, or until the filling is just set but still slightly wobbly in the center.

                                    Cool and Garnish:

                                      - Remove from the oven and let the tart cool to room temperature. Once cooled, refrigerate for at least 2 hours until set.

                                        - Before serving, sprinkle with flaky sea salt for that perfect salty-sweet contrast.
