Ingredients

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1/2 cup mini marshmallows

1/4 cup crushed peppermint candy canes (optional, for extra holiday flavor)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined. Set aside.

Cream the Butter and Sugars: In a large mixing bowl, use an electric mixer to beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture and mix until well combined.

Combine Wet and Dry Mixtures: Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined. Do not overmix.

Fold in Chocolate Chips and Marshmallows: Gently fold in the semi-sweet chocolate chips, mini marshmallows, and crushed peppermint candy canes if using, until evenly distributed throughout the dough.

Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops look slightly cracked.

Cool on Rack: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Serve warm, optionally topped with whipped cream or extra marshmallows if desired. These cookies are perfect alongside a cup of hot cocoa for the ultimate holiday treat!
