Ingredients
  

1 lb (450g) Italian sausage, casings removed

1 cup long-grain white rice

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14.5 oz) diced tomatoes, undrained

2 ½ cups chicken broth

1 tsp smoked paprika

1 tsp dried oregano

½ tsp black pepper

1 cup frozen peas

2 tbsp olive oil

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving the drippings in the skillet.

    In the same skillet, add the diced onion and bell pepper. Sauté for about 5 minutes until soft and translucent. Add the minced garlic and cook for another 1 minute until fragrant.

      Stir in the rice and cook for about 2 minutes, allowing the rice to absorb some flavors from the vegetables and sausage drippings.

        Pour in the can of diced tomatoes (with juice), chicken broth, smoked paprika, dried oregano, black pepper, and salt to taste. Stir everything to combine.

          Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and let it simmer for about 15 minutes, or until the rice is cooked and has absorbed most of the liquid.

            Once the rice is tender, add the cooked sausage back into the skillet along with the frozen peas. Stir everything together and heat for an additional 5 minutes until the peas are hot.

              Taste the dish and adjust the seasoning if necessary. Remove from heat and let it sit for a few minutes. Garnish with fresh parsley before serving.
