6 large eggs

1/4 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

8 ounces breakfast sausage, crumbled

1 cup shredded cheddar cheese

6 large flour tortillas

Optional toppings: salsa, avocado, hot sauce, or fresh herbs

Instructions
 

Cook the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the crumbled sausage and cook until browned and fully cooked through, about 5-7 minutes. Use a spatula to break it up into small pieces. Remove the sausage from the skillet and set aside.

    Prepare the Eggs: In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until fully combined.

      Scramble the Eggs: In the same skillet (no need to clean it), pour the egg mixture and cook over medium heat, stirring frequently until the eggs are just set but still slightly soft, about 3-4 minutes. Remove from heat.

        Combine Ingredients: In a large bowl, mix the cooked sausage and scrambled eggs. Gently fold in the shredded cheddar cheese until evenly combined.

          Assemble the Roll-Ups: Place a tortilla on a clean surface. Spoon a generous amount of the sausage, egg, and cheese mixture onto the center, making sure not to overfill. Starting from one side, carefully roll the tortilla tightly. Repeat this process with the remaining tortillas and filling.

            Heat the Roll-Ups (optional): For a crispy exterior, return the skillet to medium heat. Place the roll-ups seam-side down in the skillet and cook for about 2-3 minutes on each side or until golden brown and crispy.

              Serve: Cut the roll-ups in half and serve warm. Add optional toppings like salsa, avocado slices, hot sauce, or fresh herbs to elevate the dish.
