Ingredients

6 slices of bread (white or whole wheat)

6 breakfast sausages (cooked and cooled)

3 large eggs

1/4 cup milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 cup sugar (for coating)

2 tablespoons butter (for cooking)

Maple syrup (for serving)

Instructions

Prepare the Bread: Flatten each slice of bread with a rolling pin until it’s thin and pliable.

Roll the Sausage: Take one cooked sausage and place it at the edge of the flattened bread slice. Roll the bread tightly around the sausage.

Seal the Roll: Use a little water or a dab of egg wash to seal the edge of the bread so it stays rolled.

Make the Egg Mixture: In a medium bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

Heat the Pan: In a skillet, melt the butter over medium heat until it is bubbling.

Dunk and Cook: Dip each roll-up into the egg mixture, allowing it to soak for a few seconds. Carefully place it in the hot skillet and cook for 2-3 minutes on each side until golden brown.

Coat the Roll-Ups: Mix the sugar and an extra dash of cinnamon in a shallow dish. Once cooked, roll the warm roll-ups in the cinnamon sugar until fully coated.

Serve: Serve warm with maple syrup for dipping.
