1 lb large shrimp, peeled and deveined

1 cup long-grain white rice

2 cups chicken broth

1 medium onion, diced

1 green bell pepper, diced

2 ribs of celery, diced

4 cloves garlic, minced

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

1/2 teaspoon thyme

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

2 tablespoons olive oil

1 bay leaf

1/4 cup chopped fresh parsley (for garnish)

3 green onions, sliced (for garnish)

Instructions
 

Prepare the Shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp, season with a pinch of salt and pepper, and sauté for 2-3 minutes until pink. Remove the shrimp from the skillet and set aside.

    Sauté the Aromatics: In the same skillet, add the remaining olive oil. Add the diced onion, bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are soft and the onion is translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Cook the Rice: Add the rice to the skillet, stirring to coat with the vegetables. Cook for about 2 minutes, allowing the rice to lightly toast. Then, add the chicken broth, Cajun seasoning, smoked paprika, thyme, black pepper, and bay leaf. Bring to a simmer.

        Combine and Simmer: Once simmering, reduce the heat to low. Cover the skillet and let it cook for 15-20 minutes until the rice is tender and has absorbed the broth. Stir occasionally to prevent sticking.

          Add Shrimp and Finish: Once the rice is cooked, remove the bay leaf and fold in the sautéed shrimp. Cook for another 2-3 minutes until the shrimp are heated through.
