8 oz rotini pasta

8 slices of crispy bacon, chopped

1 cup cherry tomatoes, halved

1 cup romaine lettuce, chopped

1/2 cup red onion, thinly sliced

1/2 cup mayonnaise

1/4 cup sour cream

2 tbsp apple cider vinegar

1 tsp garlic powder

Salt and black pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain excess grease. Leave about a tablespoon of grease in the skillet for added flavor.

      Mix the Dressing: In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, garlic powder, salt, and black pepper until well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooked rotini, crispy bacon, cherry tomatoes, romaine lettuce, and red onion. Pour the dressing over the pasta salad and toss until everything is evenly coated.

          Chill and Serve: Cover the pasta salad and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, give it a gentle toss and garnish with fresh parsley.
