1 lb salmon fillet, skinless and boneless

4 tbsp unsalted butter

2 tbsp olive oil

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

Salt and pepper to taste

Lemon wedges, for serving

Fresh dill sprigs, for garnish

Preparation of Salmon: Cut the salmon fillet into bite-sized cubes, about 1 inch each. Pat the pieces dry with paper towels to ensure they crisp up nicely when cooked.

    Flavor the Butter: In a small saucepan, melt the butter over low heat. Add minced garlic and cook for 1-2 minutes until fragrant, making sure not to brown it.

      Incorporate Lemon & Dill: Remove the saucepan from the heat and stir in the lemon zest, lemon juice, chopped dill, salt, and pepper. Mix well and set aside.

        Heat the Oil: In a large skillet, heat the olive oil over medium-high heat. Make sure the oil is hot before adding the salmon.

          Cook the Salmon Bites: Add the salmon cubes to the skillet in a single layer. Avoid overcrowding; you may need to do this in batches. Cook for about 2-3 minutes on one side until golden and crispy, then carefully flip them over and cook for another 2 minutes on the other side, or until the salmon is cooked through.

            Add the Butter Sauce: Once the salmon is cooked, reduce the heat to low and pour the lemon butter sauce over the salmon bites. Gently toss to coat the salmon in the sauce, cooking for another minute to warm the sauce through.
