1 sheet of puff pastry (thawed if frozen)

2 cups fresh spinach (washed and chopped)

1 cup crumbled feta cheese

1/4 cup grated Parmesan cheese

1 small onion (finely chopped)

2 cloves garlic (minced)

1 large egg (beaten, for egg wash)

2 tablespoons olive oil

Salt and pepper to taste

Optional: Pinch of red pepper flakes for heat

Sesame seeds or poppy seeds (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Sauté Vegetables: In a skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Cook Spinach: Add the chopped spinach to the skillet. Cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

        Combine Filling: In a mixing bowl, combine the sautéed spinach mixture with crumbled feta cheese, grated Parmesan cheese, salt, pepper, and red pepper flakes (if using). Mix well to ensure everything is evenly distributed.

          Prepare Puff Pastry: Roll out the puff pastry on a lightly floured surface to smooth out creases. Cut the pastry into squares (approximately 4x4 inches).

            Assemble Bites: Place a tablespoon of the spinach and feta filling in the center of each pastry square. Fold the corners of the pastry over the filling to form a pocket or triangle shape. Seal the edges by pressing them together or using a fork.
