2 medium sweet potatoes, peeled and cubed

1 pound chicken breast, boneless and skinless

1 cup BBQ sauce (your favorite brand)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper, to taste

1 cup cooked quinoa or brown rice (optional)

1 cup corn (fresh, canned, or frozen)

1 red bell pepper, diced

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: In a large bowl, toss the cubed sweet potatoes with olive oil, salt, pepper, and a sprinkle of smoked paprika. Spread them out in a single layer on a baking sheet lined with parchment paper.

      Roast Sweet Potatoes: Bake the sweet potatoes in the preheated oven for about 25-30 minutes, or until they are tender and caramelized, turning once halfway through for even cooking.

        Season Chicken: While the sweet potatoes are roasting, season the chicken breasts with garlic powder, onion powder, salt, and pepper, and drizzle with a little more olive oil.

          Cook Chicken: Heat a grill or grill pan over medium-high heat. Cook the chicken for about 5-7 minutes per side, or until cooked through and internal temperature reaches 165°F (75°C). Baste the chicken with BBQ sauce in the last few minutes of cooking to let it caramelize slightly.

            Shred Chicken: Once cooked, remove the chicken from the grill, let it rest for a few minutes, and then shred or chop it into bite-sized pieces.

              Assemble the Bowls: In serving bowls, layer the quinoa or brown rice (if using), roasted sweet potatoes, shredded BBQ chicken, corn, and diced red bell pepper.

                Garnish: Top each bowl with avocado slices, a sprinkle of fresh cilantro, and more BBQ sauce if desired. Serve with lime wedges on the side for added zest.
