2 cups cooked jasmine rice (preferably day-old)

1 cup shrimp, peeled and deveined

1 cup lump crab meat

2 cloves garlic, minced

1 small onion, finely chopped

1/2 cup frozen peas and carrots mix

2 green onions, sliced

3 tablespoons soy sauce

1 tablespoon oyster sauce

2 teaspoons sesame oil

2 tablespoons vegetable oil

Salt and pepper to taste

Lemon wedges (for serving)

Prepare the Rice: If you haven't done so, cook the jasmine rice a day in advance. Spread it on a baking sheet and refrigerate overnight to allow it to dry out. This helps achieve a fluffier texture in the fried rice.

    Cook the Seafood: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and sauté until they turn pink and are fully cooked, about 3-4 minutes. Remove the shrimp and set aside.

      Sauté Aromatics: In the same pan, add another tablespoon of oil and toss in the minced garlic and chopped onion. Sauté until fragrant and golden, about 2-3 minutes.

        Add Vegetables: Stir in the frozen peas and carrots. Cook for an additional 2 minutes until the vegetables are heated through.

          Combine Ingredients: Add the cooked rice to the skillet, breaking up any clumps. Gently stir-fry the rice with the veggies for about 3-4 minutes, allowing it to absorb the flavors.

            Season the Rice: Pour in the soy sauce, oyster sauce, and sesame oil. Stir until everything is evenly coated. Season with salt and pepper as desired.

              Finish it Off: Fold in the cooked shrimp and lump crab meat, cooking for another 2 minutes until heated through.

                Garnish & Serve: Stir in the sliced green onions. Remove from heat and serve hot, garnished with additional green onions and lemon wedges on the side for a fresh squeeze of citrus.
