2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup milk (whole or 2%)

3 large eggs

2 tsp baking powder

1 tsp vanilla extract

½ tsp salt

½ cup rainbow sprinkles (subdivided for batter and decoration)

1 ½ cups powdered sugar (for frosting)

4 oz cream cheese (softened)

½ cup unsalted butter (softened)

2 tbsp milk (for frosting)

1 tsp vanilla extract (for frosting)

Food coloring (optional, for tinted frosting)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12x18 inch jelly roll pan with parchment paper and lightly grease it.

    Mix Dry Ingredients: In a mixing bowl, whisk together the flour, baking powder, and salt until well combined. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together on medium speed until light and fluffy (about 3-5 minutes).

        Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.

          Combine Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with milk. Start and end with the dry ingredients. Mix just until combined, being careful not to overmix.

            Add Sprinkles: Gently fold in ¼ cup of rainbow sprinkles into the batter.

              Bake the Cake: Pour the batter into the prepared pan and spread evenly. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

                Cool the Cake: Let the cake cool in the pan for 10 minutes, then gently lift it out using the parchment paper and transfer it to a wire rack to cool completely.

                  Prepare the Frosting: While the cake is cooling, beat the softened cream cheese and butter together until smooth. Gradually add powdered sugar and beat until fluffy. Mix in the milk and vanilla extract. If desired, add food coloring to tint your frosting.

                    Frost the Cake: Once the cake is completely cool, spread the frosting evenly across the top with a spatula. Sprinkle the remaining ¼ cup of rainbow sprinkles over the frosted cake.

                      Slice and Serve: Cut the cake into squares and serve, sharing the rainbow joy with guests!
