4 salmon fillets

2 cups broccoli florets

1 cup cherry tomatoes, halved

1 medium zucchini, sliced

1 cup asparagus, trimmed

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon lemon zest

Juice of 1 lemon

1 teaspoon dried Italian herbs (or fresh if available)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Vegetables: On a large sheet pan, toss the broccoli, cherry tomatoes, zucchini, and asparagus with olive oil, salt, pepper, and half of the lemon juice. Spread them out evenly on one side of the sheet pan.

      Make Garlic Butter: In a small bowl, mix together the melted butter, minced garlic, lemon zest, Italian herbs, salt, and pepper.

        Add Salmon to Sheet Pan: Place the salmon fillets on the other side of the sheet pan. Drizzle the garlic butter mixture evenly over the salmon fillets, ensuring they are completely coated.

          Bake: Transfer the sheet pan to the preheated oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender, stirring the veggies halfway through cooking.

            Finish with Freshness: Once out of the oven, drizzle the remaining lemon juice over the dish and garnish with chopped fresh parsley.
