Ingredients

For the Shredded Chicken:

2 large chicken breasts (boneless, skinless)

1 cup chicken broth

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

For the Gravy:

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup chicken broth (from cooking the chicken)

1/2 cup heavy cream

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley (for garnish)

For the Mashed Potatoes:

2 pounds russet potatoes (peeled and diced)

1/2 cup milk (or more to taste)

4 tablespoons butter

Salt to taste

Freshly ground black pepper to taste

Instructions

Cook the Chicken:

    - In a slow cooker, place chicken breasts, 1 cup of chicken broth, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.

      - Once cooked, shred the chicken using two forks and keep it warm.

        Make the Gravy:

          - In a saucepan over medium heat, melt the butter. Stir in the flour, whisking for about 2 minutes until it turns golden.

            - Gradually add the reserved chicken broth and heavy cream while whisking continuously to avoid lumps. Add Worcestershire sauce, salt, and pepper. Cook for about 5-7 minutes until the gravy thickens. Stir in the shredded chicken and mix well.

              Prepare the Mashed Potatoes:

                - Boil diced potatoes in salted water until tender, about 15-20 minutes. Drain them well.

                  - Mash the potatoes with butter and milk. Adjust the consistency with more milk if desired. Season with salt and freshly ground black pepper to taste.

                    Assemble the Dish:

                      - Place a generous serving of mashed potatoes on a plate. Top with the warm shredded chicken gravy. Garnish with chopped fresh parsley.

                        Serve:

                          - Enjoy this comforting dish warm, perfect for a cozy family dinner.
