1 cup quinoa, rinsed

2 cups vegetable broth or water

1 cup mango, diced

1/2 cup red bell pepper, diced

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

1 tablespoon olive oil

Salt and pepper to taste

Cook the Quinoa: In a medium pot, bring 2 cups of vegetable broth or water to a boil. Add the rinsed quinoa, cover, and reduce heat to low. Simmer for about 15 minutes or until quinoa is fluffy and all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
