Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 large onion, diced

1 green bell pepper, diced

1 celery stalk, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 cup chicken broth

2 tablespoons tomato paste

2 teaspoons Worcestershire sauce

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

2 cups cooked white rice

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

In a large skillet, heat the olive oil over medium heat. Add the diced onion, bell pepper, and celery, and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

Add the diced tomatoes (with juice), chicken broth, and tomato paste to the skillet. Mix well to combine all the flavors.

Stir in the Worcestershire sauce, Cajun seasoning, smoked paprika, cayenne pepper, salt, and black pepper. Bring the mixture to a simmer, letting it cook for about 10 minutes for the flavors to meld.

Add the shrimp to the skillet, stirring gently so they are submerged in the sauce. Cook for an additional 4-6 minutes, or until the shrimp are pink and opaque. Be careful not to overcook.

Taste and adjust seasoning if necessary; add more cayenne if you prefer additional heat.

Serve the shrimp creole over a bed of cooked white rice. Garnish with chopped green onions and fresh parsley for a refreshing finish.
