Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 medium onion, diced

1 green bell pepper, diced

2 celery stalks, diced

3 cloves garlic, minced

1 can (14.5 ounces) diced tomatoes, with juices

1 cup tomato sauce

1 tablespoon Worcestershire sauce

1 tablespoon hot sauce (adjust to taste)

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon cayenne pepper (optional)

1 bay leaf

Salt and black pepper, to taste

2 cups cooked white rice (for serving)

Fresh parsley, chopped (for garnish)

Instructions

In a large skillet or saucepan, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery; sauté for about 5-7 minutes until softened.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the diced tomatoes (with their juices), tomato sauce, Worcestershire sauce, hot sauce, thyme, oregano, cayenne pepper (if using), and bay leaf. Stir well to combine.

Bring the mixture to a simmer, reduce the heat, and let it cook for about 10 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.

Add the shrimp to the skillet, stirring gently to combine them with the sauce. Cook for 3-5 minutes, or until the shrimp are pink and opaque.

Remove the bay leaf and adjust seasonings if necessary.

Serve the shrimp mixture over cooked white rice and garnish with freshly chopped parsley.
