Ingredients

1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon soy sauce

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (optional)

1 cup shredded carrots

1 cup cucumber, thinly sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

1 head butter lettuce or romaine lettuce, leaves separated

Instructions

Prepare the Shrimp: In a medium bowl, toss the shrimp with olive oil, minced garlic, ginger, soy sauce, sesame oil, red pepper flakes (if using), salt, and pepper. Let it marinate for about 15 minutes.

Cook the Shrimp: Heat a skillet over medium heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and set aside.

Prepare the Filling: In a large bowl, combine the shredded carrots, sliced cucumber, chopped cilantro, and lime juice. Mix well and season with salt and pepper to taste.

Assemble the Wraps: Take a lettuce leaf and fill it with a tablespoon or two of the shrimp followed by a generous scoop of the vegetable filling.

Serve: Arrange the filled lettuce wraps on a platter. Optionally, you can serve with additional lime wedges and a dipping sauce like hoisin or sweet chili sauce for extra flavor.
