8 oz fettuccine pasta

12 oz large shrimp, peeled and deveined

1 cup fresh basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

1/4 cup olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Zest of 1 lemon

Juice of 1/2 lemon

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté Shrimp: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add the shrimp, season with salt and pepper, and cook for about 2-3 minutes on each side until they turn pink and opaque.

      Combine Ingredients: Lower the heat, add the cherry tomatoes to the skillet, and stir for 1-2 minutes until they begin to soften.

        Mix with Pesto: Add the cooked pasta to the skillet with shrimp and tomatoes. Pour in the basil pesto and reserved pasta water, mixing well to combine. If needed, add more pasta water to reach the desired creaminess.

          Add Final Touches: Stir in the lemon juice, lemon zest, and half of the grated Parmesan cheese. Adjust seasoning with salt and pepper as necessary.

            Serve: Plate the shrimp pesto pasta, sprinkle with remaining Parmesan cheese, and garnish with fresh basil leaves. Serve immediately for a delightful meal.
