For the Shrimp Scampi:

1 lb large shrimp, peeled and deveined

8 oz linguine or spaghetti

4 tablespoons unsalted butter

2 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

Zest of 1 lemon

1/4 cup fresh lemon juice

1/4 cup chicken or vegetable broth

Salt and black pepper, to taste

1/4 cup chopped fresh parsley

For the Garlic Bread:

1 French baguette or Italian loaf

1/2 cup unsalted butter, softened

4 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside.

    Prepare the Garlic Bread: While the pasta cooks, preheat the oven to 375°F (190°C). In a small bowl, mix the softened butter, minced garlic, chopped parsley, salt, and black pepper until well combined. Slice the baguette in half lengthwise and spread the garlic butter mixture evenly on both halves. Place on a baking sheet and bake for 10-12 minutes, or until golden and crispy.

      Sauté the Shrimp: In a large skillet over medium heat, heat the olive oil and 2 tablespoons of butter. Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.

        Add Shrimp: Add the shrimp to the skillet in a single layer. Season with salt and black pepper. Cook for about 2-3 minutes per side until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

          Make the Sauce: In the same skillet, add the lemon zest, lemon juice, and chicken broth. Simmer for a couple of minutes, scraping up any browned bits from the bottom of the skillet.

            Combine Everything: Return the shrimp to the skillet along with the cooked pasta. Toss everything together, adding the remaining 2 tablespoons of butter and chopped parsley. Adjust seasoning with salt and pepper as needed.

              Serve: Ladle the shrimp scampi into bowls and serve hot, with the garlic bread on the side. Garnish with extra parsley if desired.
