8 oz shrimp, peeled and deveined

2 slices of white or whole grain bread

1/4 cup fresh cilantro, chopped

1 clove garlic, minced

1 teaspoon ginger, grated

1 tablespoon soy sauce

1 tablespoon sesame oil

1 egg white

Salt and pepper to taste

1/2 cup panko breadcrumbs

Vegetable oil for frying

Lime wedges (for serving)

Prepare the Shrimp Mixture: In a food processor, combine the peeled shrimp, cilantro, garlic, ginger, soy sauce, sesame oil, egg white, and a pinch of salt and pepper. Pulse until the mixture reaches a smooth but slightly chunky texture.

    Toast the Bread: Cut each slice of bread into quarters (or triangle shapes if you prefer). Lightly toast them in a toaster or under the broiler until they're golden brown but not too crispy.

      Spread the Mixture: Generously spread the shrimp mixture over the toasted bread pieces, ensuring an even layer on each piece.

        Coat with Panko: Sprinkle panko breadcrumbs over the shrimp spread, pressing gently to ensure they stick.

          Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium heat until shimmering.
