1 cup fresh lemon juice (about 4-5 lemons)

Zest of 2 lemons

1 cup granulated sugar

3 large eggs

1/4 cup unsalted butter, melted

1/4 teaspoon salt

1 cup whole milk

Powdered sugar for dusting (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Prepare a baking dish by placing it in a larger roasting pan and fill the roasting pan with hot water halfway up the sides of the baking dish (this creates a water bath).

    In a medium mixing bowl, combine the fresh lemon juice, lemon zest, granulated sugar, and salt. Whisk together until the sugar is dissolved.

      In another bowl, whisk the eggs until frothy, then combine them with the lemon mixture. Stir in the melted butter and whole milk until well incorporated.

        Strain the mixture through a fine-mesh sieve into another bowl to remove any bits of zest or egg clumps, ensuring a smooth pudding.

          Pour the lemon mixture into the prepared baking dish.

            Carefully transfer the baking dish into the preheated oven (don’t splash water into the lemon mixture!). Bake for about 30 to 35 minutes, or until the pudding is set but still slightly jiggly in the center.

              Remove from the oven and let it cool to room temperature before refrigerating for at least 2 hours to set completely.

                To serve, dust the cooled pudding with powdered sugar and garnish with fresh mint leaves if desired.
