1.5 lbs boneless, skinless chicken thighs, cut into chunks

4 medium carrots, sliced

3 medium potatoes, diced

1 onion, chopped

2 cloves garlic, minced

1 cup celery, diced

1 can (14.5 oz) diced tomatoes, undrained

4 cups low-sodium chicken broth

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Prep the Vegetables: Start by preparing all the vegetables. Chop the onion, slice the carrots, dice the potatoes, and chop the celery.

    Sear the Chicken (Optional): In a skillet, heat olive oil over medium-high heat. Add chicken pieces and sear until lightly browned, about 3-4 minutes per side. This step adds extra flavor but can be skipped for a simpler method.

      Combine in Crockpot: Place the seared chicken (or raw if skipping the searing step) into the crockpot. Add all chopped vegetables (carrots, potatoes, onion, celery), minced garlic, and the can of diced tomatoes.

        Add Seasonings: Pour in the chicken broth and sprinkle the dried thyme, rosemary, salt, and pepper over the top.

          Cook: Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is fully cooked and vegetables are tender.

            Stir and Serve: Before serving, give the stew a good stir. Taste and adjust seasoning if necessary. Serve hot with crusty bread on the side.
